Lang Biang Mountain
Story Intro
This coffee holds a special place for me as it is grown by the K’ho ethnic minority, one of the oldest groups in the Central Highlands, they live mainly on the mountains. They are among the first to cultivate coffee in Vietnam with seeds introduced during the French colonization. On my visit to the K’Ho Ethnic Minority Families in winter 2023, I had the privilege of learning about their rich cultures and the entire coffee lifecycle. The Process
The whole cherry was sun dry on a raised bed for 20 days, rotating the cherries regularly to ensure even drying and prevent fermentation issues, mold or uneven drying that can impact the flavor profile.
Extensive time are spent sorting the beans for defects using both machines and hand sorting.
