Story Intro

The Magnum Sidra is a Borbon Sidra variety that I sourced directly through my good friend Santiago, who runs a family coffee cooperative in Colombia's Tolima region.

 

Roasted by River Phin Coffee , this coffee has earned a Silver medal at the prestigious Golden Beans 2024 roasting competition in the Filter category and a Bronze in Espress.

The Process

This mosto processed coffee undergoes a meticulous 72-hour anaerobic fermentation, leveraging the rich microbial populations from coffee fermentation by-products, including beneficial bacteria and yeasts. Following this, the two-step drying process begins with mechanical drying in a silo for 2 to 4 days under controlled temperatures, ensuring greater complexity and highlighting its flavors.
